Arroz con Coco

Ingredients

  • 2 cups coconut milk
  • 1 cup long grain rice 
  • 1 teaspoon salt
  • 2 cups water 
  • 2 Tablespoons sugar 
  • 1/3 cup raisins

Directions

  1. Place the coconut milk in a heavy saucepan and cook over medium heat for about 30 minutes, scraping the bottom of the pan occasionally to prevent the caramelizing coconut from burning.
  2. Add the rice and cook, stirring frequently until well coated with the coconut caramel for 1 minute. 
  3. Add the water, raisins, salt and sugar. 
  4. Bring to a boil, stirring once to combine ingredients.
  5. Reduce the heat to low and simmer gently. 
  6. Cover for about 20 minutes or until the rice is tender and the water absorbed. 
  7. Remove from the heat and let it stand for 5 minutes. 
  8. Serve hot and enjoy.
