Baked Chicken Parmesan

Serving Size: 1 1/4 cup

Serves: 4

Ingredients:

  • 2 pounds boneless, skinless chicken cut into 8 pieces
  • 3/4 cup seasoned breadcrumbs, we used whole wheat, you can also use GF crumbs
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 cup part-skim, shredded mozzarella cheese
  • 1 cup marinara sauce
  • cooking spray

Directions:

  1. Preheat oven to 450F. Spray a large baking sheet lightly with spray
  2. Combine breadcrumbs and parmesan cheese in a bowl. Put olive oil in another bowl. Lightly brush the oil onto the chicken, then dip into breadcrumb mixture. Place on baking sheet and repeat with the remaining chicken
  3. Lightly spray with cooking spray and bake in the oven for 25  minutes
  4. Remove from oven, sppon sauce over each piece of chicken and then top each with shredded mozzarella cheese
  5. Bake 5 more minutes or until cheese is melted
