Basic Chicken Gravy:

Ingredients:

1/4 cup chicken drippings (fat and juices from roasted chicken)

1/4 cup all-purpose flower

2 cups liquid (juices from roasted chicken, broth or water)

1/2 teaspoon salt, or less, if using drippings

1/2 teaspoon pepper
Directions:

Pour drippings from roasting pan into sauce pan, leaving brown particles in the pan.

Return 1/4 cup drippings to roasting pan. (Measure accurately because too little fat makes gravy lumpy.)\

Stir in flour. (Measure accurately so gravy is not greasy.)

Cook over medium heat, stirring constantly, until mixture is smooth an bubbly. Stir in liquid (chicken juice, broth or water).

Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in salt and pepper, adjust seasoning to taste.
