Ingredients:
- 1 large Banana Leaf for cooking only not edible (can use foil)
- 2 bunches Kale, de-ribbed and sliced
- 2 Taro roots peeled and cut up
- 2 Green plantains peeled and cut up
- 2 Sweet potatoes peeled and cut up
- 2 pounds Chicken boneless skinless thighs, cut into bite size pieces
- 2 pounds Pork shoulder cut into bite size pieces
- 1 Pineapple cut into bite size pieces
- 1 can Coconut milk
- 2 Limes cut into wedges
- 1 teaspoon salt, more to taste
- Other spices/flavorings like garlic, ginger and onion
Directions:
- Preheat oven to 400 degrees
- In a large baking dish place a layer down of banana leaf or foil.
- Next place a layer of Kale leaves (1 bunch)
- Layer the root vegetables and plantains, over the kale
- Next place the pork and chicken over the root vegetables
- Sprinkle the salt over the meat, and add other flavorings if desired.
- Put the pineapple over the meat.
- Squeeze the lime quarters and throw them in as well after squeezing.
- Pour over the coconut milk
- Cover with the remaining kale.
- Cover completely with foil, sealing the sides as best you can.
- Bake in preheated oven for about 1 hour. Open up to make sure that the meat is cooked through and root vegetables are tender. It may take longer. Serve hot and enjoy!
