Steamed Broccoli, Carrots, and Cauliflower

Ingredients

  • 5 cups chopped broccoli 
  • 5 cups baby carrots
  • 5 cups chopped cauliflower 
  • 15 cloves minced garlic
  • 1 ¼ teaspoon salt 
  • 1 ¼ cup olive oil

Directions

  1. Add enough water to cover the veggies in a pot and bring to a boil 
  2. While waiting for the water to boil, chop veggies and garlic
  3. Once the water is boiling, add the chopped broccoli, carrots, and cauliflower to the water, cover the pot with a lid and lower the heat to medium-high.
  4. Let the veggies steam for about 10 minutes or until tender when poked with a fork 
  5. While the veggies are steaming, add garlic, salt and olive oil to a small saute pan.
  6. Saute until garlic is fragrant (2-3 minutes)
  7. Once veggies are done steaming, if there’s excess water, drain veggies with a colander
  8. Poor garlic mix over steamed veggies
  9. Serve!
